Crust: 4 c. white flour 1 t. salt 1 t. baking powder 1 c. lard 4 egg yolks 2 T. lemon juice 8-10 T. cold water Filling: 7 c. finely chopped, peeled apples 2 t. cinnamon dash of nutmeg 2 c. sugar ¼ c. flour Glaze: 1 c. confectioner’s sugar 1 T. lemon juice 1 T. milk Directions Combine flour, salt, baking powder and lard until mixture is crumbly. Whish egg yolks, lemon juice and water; add to flour mixture, tossing with folk until dough forms a ball. Divide in half. Chill 30 minutes. Roll out 1 part of dough between two large sheets of wax paper, into a 17x12 rectangle. Transfer to an ungreased 15x10x1 baking pan. Press onto bottom and up side of pan. Combine all filling ingredients, spread over crust. Roll out remaining curst as you did bottom crust; place over filling. Press top and bottom curst together; trim edges and pinch to seal.
