2 c. flour
½ t. salt
1 egg, well beaten
1 ¼ c. milk
1 T. sugar
3 t. baking powder
1/4 c. sugar
6 T. shortening
1 c. blueberries

Directions

Sift together flour, baking powder and salt and ¼ c. sugar. Combine egg, milk and shortening in a side dish, then add to flour mixture. Stir until thoroughly moistened but yet lumpy. Fold in berries. Fill greased muffin pans two-thirds full. Sprinkle tops with the 1 T. sugar. Bake at 400 degrees for nearly 25 minutes. Yields: 1 dozen
