Yellow cake mix 4 eggs ¼ c. oil 11 oz. mandarin oranges with juice Topping: Large box instant vanilla pudding 12 oz. Cool Whip Mandarin orange slices, drained 20 oz. crushed pineapple Slices strawberries (optional) Directions Mix first four ingredients very well. Bake in greased 9x13 pan in a 350 degrees oven for 30 minutes or until toothpick inserted in the center comes out clean. Cool well. In the meantime mix pudding mix and pineapple (with juice), stirring until pudding is dissolved. Stir in cool whip. Place on cooled cake. Chill for 6-8 hours or overnight. Garnish with strawberries and mandarin orange slices if desired. Very refreshing! Low fat version: Substitute 1 c. egg beaters and ¼ c. applesauce instead of eggs and oil.
