2 ¼ c. oats, quick or old fashioned, uncooked 2 c. flour ¾ c. shredded coconut, optional 1 t. salt 1/3 c. maple syrup or maple flavored pancake syrup 1 egg, lightly beaten 1 ½ c. brown sugar, packed 1 t. baking soda 12 T. butter, melted 1 t. vanilla Directions Heat oven to 350 degrees. Lightly spray 13x9 pan with cooking spray. For bars mix oats, flour, sugar, coconut (optional) in large bowl. In small bowl, mix butter, syrup, egg and vanilla. Combine mixes. Dough will be still. Press dough evenly onto bottom of pan. Ingredients for Topping: 1 ½ c. chopped pecans (approx. 6 oz.) 1/3 c. maple syrup or maple flavored pancake syrup ¼ c. packed brown sugar Directions For topping, mix pecans and sugar in bowl. Sprinkle evenly over dough, pressing down lightly. Drizzle evenly with syrup. Bake at 35-38 minutes or until edges are set but center is soft. Don’t overbake. Cool completely in pan on wire rack.
