1 ¾ c. brown sugar ¾ c. butter or margarine 2 eggs ½ tsp. salt 1 tsp. cinnamon 1 tsp. baking powder 3 T. boiling water 1 tsp. baking soda 2 ½ c. flour 2 c. oatmeal Filling: 1 egg white, beaten 2 T. milk 1 tsp. vanilla 2 c. powdered sugar ¾ c. shortening Directions Cookies: Cream sugar and shortening. Add eggs, salt, cinnamon and baking powder. Add baking soda, dissolved in water. Gradually add flour and oatmeal. Drop batter by heaping teaspoonful into greased cookie sheet. Bake at 350 degrees for 8-10 minutes or until lightly browned. Filling: Mix the first 3 ingredients and ½ the powdered sugar; beat until fluffy. Add rest of powdered sugar and the shortening.
