3 c. sugar
1/2 c. light syrup
1/2 c. cold water
2 egg whites
1 t. vanilla
nutmeats (optional)

Place sugar, syrup and water in a pan over low heat. Stir only until sugar is dissolved, then cook until a soft ball is formed when dropped into cold water.
Beat egg whites until stiff, continue beating and pour 1/2 of the syrup until it forms a hard ball in when tried in cold water and cracks when it hits the side of the cup.
Now add this syrup gradually to the egg mixture, beating all the time. Add vanilla and beat until mixture is thick enough to pour in pans.
