1 c. pumpkin
1 rounded T. flour
1 scant c. sugar
2 eggs, separated
1 1/3 c. milk
1/4 t. salt
1/4 t. cinnamon
1/4 t. ginger, scant
1/4 t. nutmeg

Heat pumpkin. remove from heat and add flour. Stir well. Add dry ingredients. Beat and add egg yolks and milk. Beat egg whites and add last.
Fold into mixture. Pour into unbaked pie shell and bake at 400 for 20 minutes, then reduce heat to 350 and bake until firm, approx. 25 minutes longer.
