Amish Breakfast Recipes

2 eggs, beaten 4 T. vegetable oil 2 c. buttermilk 1 c. whole wheat flour 1 c. all-purpose flour 1 t. soda 1 t. salt 2/3 c. brown sugar 1 1/4 c. quick oatmeal Mix together ingredients and fry in greased skillet.

Cheese Souffle

8 slices bread, cubed 1 lb. cheese, grated 6 eggs, beaten 2 c. milk 1/4 c. margarine, melted 1 T. onion salt salt and pepper to taste cubed ham Layer bread, cheese and ham in baking pan. Oatmeal Pancakes

1 1/2 c. oats 2 c. buttermilk 1 t. salt 2 eggs, beaten 1 t. soda 1 T. maple syrup 3/4 c. whole wheat flour Soak oatmeal in buttermilk for 10 minutes. Beat eggs and add to oatmeal mixture. Add rest of ingredients; mix well. Fry in greased frying pan. Serves 6

Johnny Cake

1 1/2 c. cornmeal 1/2 c. flour 1 egg 1 t. salt 1 t. soda 1 T. molasses milk Mix all ingredients together except milk. Then add milk to make consistency of pancake batter. Fry on hot griddle.

Potato Pancakes

3 c. finely shredded potatoes 1 1/2 T. flour 1/8 t. baking soda 3/4 t. salt 1/2 t. grated onion 2 eggs, beaten Combine potatoes and eggs. Mix dry ingredients and onion. Mix well and drop by tablespoon onto greased skillet. Brown lightly on both sides.

4 c. brown sugar 2 qts. sour milk 4 t. salt 4 t. baking soda 14 c. whole wheat flour 1/2 lb. butter, melted 4 t. vanilla 2 t. maple flavoring Combine all ingredients and bake at 350 stirring every 15 minutes until golden brown. Crumble and dry.

Baked Oatmeal

1 c. oil 1 1/2 c. sugar 4 eggs 6 c. oatmeal 4 t. baking powder 1 t. salt 1 t. cinnamon 2 c. milk Mix oil, eggs and sugar together until glossy and yellow. Add remaining ingredients and beat. Bake at 400 for 35 minutes. may serve with brown sugar and raisins.
