White Cake

Sift together into a bowl: 2 1/8 c. flour 4 t. baking powder 1 t. salt 1 1/2 c. sugar Add: 1/2 c. shortening 1 c. + 1 T. milk Beat 2 minutes then add 2/3 c. unbeaten egg whites. Beat for 2 minutes. Bake at 350 for 35 minutes.

Rhubarb Cake

4 c. diced rhubarb 1 c. sugar 1 (3 oz.) box strawberry Jello 1 box yellow cake mix 1 1/2 c. water 1/3 c. melted butter Layer in a 13 x 9 pan in order given. Bake at 350 for 1 hour. Cool and serve with Cool Whip.

Oatmeal Cake

1/2 c. oleo dissolved in 1 c. boiling water Add 1 c. of oatmeal and let stand for 10 minutes. Add: 2 eggs 1 c. white sugar 1 c. brown sugar 1 1/3 c. flour 1 t. baking soda 1 t. cinnamon 1 t. salt Bake at 325 until done

1 c. confectioners sugar 1/4 t. cream of tatar 1/2 t. cornstarch pinch of salt 5 T. boiling water 2 egg whites 1 t. vanilla Boil together sugar, cream of tartar, cornstarch, salt and water for 1 1/2 minutes. Then beat in egg whites until stiff. Blend in vanilla.

3/4 c. Crisco 1/4 c. milk 3 c. powdered sugar 1 t. vanilla Mix together and spread!

Quick Icing

5 T. brown sugar 3 T. milk 2 T. butter Warm and mix. Cool and add: 1 t. vanilla and powdered sugar until right consistency for spreading.

Penuche Icing

1/2 c. butter 1 c. brown sugar 1/4 c. milk 2 c. powdered sugar Melt butter in saucepan. Stir in brown sugar. Boil and stir in milk. Boil, stirring constantly. Cool to lukewarm. gradually blend in powdered sugar.

Chocolate Frosting

1 c. sugar 2 heaping T. cornstarch 1 T. cocoa 1 c. hot water Cook together. Then add: 1 t. vanilla 1 T. butter

1 c. cream 1/2 c. butter 1 c. sugar 3 egg yolks 1 t. vanilla 1 1/3 c. coconut 1 c. chopped pecans Cook and stir over medium heat: cream, butter, sugar, egg yolks, and vanilla until thickened. Add coconut and pecans. Beat until thick enough to spread.
