Amish Grandma's Miscellaneous Recipes

½ lb Velveeta cheese 1 – 8oz pkg. Philadelphia Cream Cheese 1 tsp Worcestershire sauce some green flakes: parsley, celery ½ pkg. slender sliced ham (cut fine) Mix well.

1 1/3 c dry beans, wash after measuring 1 tsp salt Put above in 1 quart can and then fill with water. Process like string beans. (3 hours water both) (try 50% pressure).

3 parts bread to 1 part cornbread 15 c cubed bread 4 c cornbread crumbs 2 large chopped onions, browned in butter celery scant tsp sage 2 tsp salt pepper Chopped giblets and broth Use broth from giblets to moisten bread and some water. Finish with about 1 qt milk.

12 good corn cobs (red) Boil in one gallon water until right color. Cool and strain. Add 3 c brown sugar 1 c white sugar Boil together until right consistency.

6 red cobs (washed) Boil 1 hour in 3 qts water- strain Add 3 lbs brown sugar and water enough to make 3 qts. Boil until thick enough to suit or the consistency of maple syrup. Be sure to select cobs free from mold. Light colored cobs will make lighter syrup, also better tasting.

16 c applesauce 8 c sugar (can be ½ brown, ½ white) 4 tsp cinnamon 1 c vinegar Heat on top of stove till boiling. Put in 350 degree oven for 3 hours. Stir every 15 minutes. Can and seal in pint cans.

1 c cornmeal 1 cup cold water Mix well. Stir mixture into: 3 c boiling water or 2 ½ c water and ½ c milk. Add salt to taste.

1/3 c Bisquick 1 c shredded zucchini 1 egg ¼ c shredded cheese Fry like pancakes.

Ice Milk

2 beaten eggs ½ c condensed milk 1 tsp vanilla ¾ c sugar Mix in fresh clean snow.

4 Tbsp buttermilk powder 1 c flour 1 Tbsp sugar 1 tsp baking powder ½ tsp soda ¼ tsp salt 1 egg 1 c water 2 Tbsp oil Make 10 four-inch pancakes

24 mangoes 18 green tomatoes 4 onions Grind and squeeze out juice. 1 Tbsp flour 1 Tbsp celery seed 1 Tbsp salt 2 cups sugar (1 ½ is enough) ½ cup prepared mustard Add to above and boil 2 min. Add: 1 qt. mayonnaise Bring to boil, can and seal.

2 c water 2 c brown sugar boil together then put in ¼ c butter and a little cinnamon.
